Instructions
To make the crust:
Preheat oven to 350°F. Spray a 9” springform pan with cooking spray.
In a bowl, combine graham cracker crumbs, Splenda Sweetener, and melted butter until the crumbs are evenly moist. Press into the bottom and up the sides of the springform pan.
Bake 10 minutes. Remove from oven and cool on a wire rack.
To make the filling:
In a bowl using an electric mixer, beat regular and nonfat cream cheese together at high speed until creamy. Gradually add Splenda Sweetener and mix well.
Add eggs, one at a time, beating just until each one is incorporated. Add lime juice and salt; beat until smooth. Pour into prepared crust.
Bake 40–50 minutes or until mixture is almost set and slightly firm to the touch.
Run a knife around edge of pan to release sides and help prevent cracking.
Cool to room temperature on a wire rack, then cover and refrigerate at least 8 hours.
