Ingredients
1 refrigerated pie crust, softened according to package directions
¼ cup Splenda® Stevia Sweetener Jar
2 tablespoons + 1 teaspoon powdered pectin for low-sugar recipes
4 cups frozen strawberries, thawed, with juice
2 tablespoons fresh lemon juice
½ tablespoon vanilla extract
Fresh strawberries, sliced, for garnish
Reduced fat frozen whipped topping, thawed, for garnish

Instructions
Preheat oven to 350°F.
Unroll pie crust and press into pie dish. Turn edge under and flute.
Bake for 10–15 minutes or until light golden brown; remove and cool.
In a small bowl, stir together Splenda Stevia Sweetener and pectin.
In a saucepan, combine strawberries and their juice, lemon juice, and vanilla extract. Whisk in sweetener mixture. Bring to rolling boil and cook for 3–4 minutes, until thickened.
Pour into prepared pie crust and cool until almost set. Top with thinly sliced fresh strawberries. Refrigerate until filling is set, at least 2 hours.
Serve with whipped topping.
