Ingredients
12 ounces low-fat evaporated milk
4 tablespoons unsalted butter
1 cup Splenda® Granulated Sweetener
3 cups sugar-free or stevia-sweetened chocolate chips, a mix of dark or semi-sweet and milk chocolate
2 teaspoons vanilla pure vanilla extract
3 tablespoons stevia-sweetened white chocolate chips, roughly chopped
Instructions
Line an 8×8-inch pan with parchment paper and spray with nonstick cooking spray. Set aside.
In a large saucepan over medium heat, add all ingredients except vanilla and white chocolate chips. Continuously stir together gently until chocolate chips are melted, and mixture is completely smooth.
Remove from heat and stir in vanilla. Pour mixture into prepared pan. Smooth out the top of the mixture. Sprinkle white chocolate all over top.
Cover and refrigerate until fully firm, about 2-4 hours. Remove carefully, pulling up on the parchment paper. Slice fudge into 1 ¼-inch squares. Store in an air-tight container in the refrigerator. Enjoy within the week!
