Beaver Tails

Instructions

  1. In a bowl, stir together the yeast, warm water and Splenda Sugar Blend until yeast is completely dissolved.  Let mixture set for 5 minutes.
  2. Stir in the melted margarine or butter, milk, salt, and vanilla. While whisking vigorously, beat in egg. Continue stirring and blend in flour. When the flour is blended in, continue kneading until the ball becomes elastic (about 5 minutes).
  3. Place dough back into a bowl and cover with a towel. Place in a warm location, and let dough rise about 1 hour.
  4. Dump dough out into a lightly floured surface, and cut into 10 equal parts. Roll each part into a small ball, and let those 10 balls rest another 15 minutes.
  5. Spray the inside of the air fryer with nonstick cooking spray.  Take each dough ball and flatten it using your fingers, pulling at the ends, to shape it like a beaver tail.
  6. Put two Beaver Tails in the air fryer, and cook for 5 minutes at 375ºF, or until light golden brown.
  7. While the Beaver Tails are cooking, make the cinnamon-sweetener topping by combining plant-based spread or butter, Splenda Sugar Blend and cinnamon in a bowl.
  8. Remove Beaver Tails from the air fryer and immediately brush with a teaspoon of melted margarine or butter, and sprinkle with cinnamon-sweetener topping.  Repeat for the rest of the dough balls, until all Beaver Tails are air-fried, brushed with butter, and topped with cinnamon-sweetener.  Serve immediately.
