Sprinkle yeast into warm water and stir gently. Let yeast set 5 minutes. (Yeast should start developing bubbles). Then add Splenda Monk Fruit Sweetener and salt, stirring until dissolved.
Add flour to a medium-sized bowl, making a well in the middle. Pour yeast mixture in the middle, and stir together. Stir until flour is incorporated (there will still be some leftover flour that doesn’t stick around the sides of the bowl. Shape a ball out of the dough.
Dump dough ball onto parchment paper, and knead it for 5 minutes until smooth and shiny. Set it aside.
Fill a pot with 6 cups water and bring to a boil. When the water has boiled, stir in baking soda and turn the heat to a low boil.
Cut dough ball into 8 parts. Roll each part into a log about 6-8 inches long. Cut the dough into 6 (about 1-inch chunks).
Add 1-inch dough chunks to low boiling water. Stir gently. After 60 seconds, remove dough balls with a slotted spoon to a plate.
Heat air fryer to 390°F. Add 8-12 pretzel bites to the air fryer, so they in a single layer but not touching, and cook for 5 minutes. Remove from air fryer, brush with butter if desired, and sprinkle with pretzel salt.
Serve immediately with mustard, or Sweet Cider Mustard Dip!

If you don’t have an air fryer these can easily be made in the oven. Follow the steps up to the water bath. Remove pretzel bites from the water bath, then place on a baking sheet covered with parchment paper. Bake at 425°F for 10-12 minutes, or until golden brown. Brush with butter or spray with nonstick butter-flavored cooking spray, and sprinkle with kosher salt.
