8 slices brioche bread or another artisan bread
2 large eggs
1/4 cup plus 2 tablespoons Splenda® Stevia Sweetener Jar
3/4 cup unsweetened vanilla almond milk
1 teaspoon pure vanilla extract
2 teaspoons ground cinnamon, divided

Instructions
Preheat oven to 350°F. Cover a baking sheet with parchment paper. Spray generously with nonstick cooking spray.
In a shallow bowl or a shallow pan, whisk eggs for 1 minute. Add ¼ cup Splenda Stevia Sweetener and whisk a minute more. Add in milk, vanilla, and ½ teaspoon cinnamon.
Using a serrated knife, cut each slice of bread from top to bottom into 3-4 strips, depending on the size of your bread.
One at a time, dip each stick of bread into the custard mixture, fully coating bread, but working quickly so that the bread doesn’t get soggy or absorb too much liquid. Shake off any excess liquid, then lay each slice on the prepared baking sheet. Repeat for each slice. Arrange slices on the baking sheet so that they are not touching each other.
Stir together 2 tablespoons of Splenda Stevia Sweetener and 1 ½ teaspoons of cinnamon into a small bowl. Sprinkle French toast sticks with half of the cinnamon sweetener mixture. Spray French toast sticks lightly with nonstick cooking spray.
Bake for 12 minutes. Remove from oven, flip each French toast stick. Spray lightly with nonstick cooking spray, then sprinkle with the rest of the cinnamon sweetener mixture. Place back in oven for another 12 minutes. Remove and let cool slightly. Enjoy immediately, or freeze for a future easy breakfast!
Note
To freeze French Toast Sticks, let them cool completely after removing from the oven. Place French Toast Sticks in a zip-top bag, removing as much air as possible. Freeze. Reheat in the microwave or toaster oven. Enjoy within a month.
