1 box refrigerated pie crusts, softened according to package directions
2 (14.5-ounce) cans pitted tart red cherries
1 cup Splenda® Granulated Sweetener
¼ cup cornstarch
2 teaspoons fresh lemon juice
¼ teaspoon almond extract

Instructions
Preheat oven to 375°F.
Unfold 1 pie crust; press out fold lines. Fit pie crust into a 9” pie plate.
Drain cherries, reserving 1 cup juice; set fruit aside.
In a saucepan, combine Splenda Sweetener and cornstarch in a medium saucepan. Gradually stir in reserved juice. Cook over medium heat, stirring constantly, until mixture begins to boil. Boil 1 minute, stirring constantly.
Remove from heat and stir in lemon juice and almond extract. Fold in reserved cherries; cool slightly.
Spoon mixture into pie shell. Unfold remaining pie crust; press out fold lines. Place top crust over filling. Tuck excess top crust under bottom crust edge, pressing edges together to seal; flute. Cut slits or shapes in top crust to vent.
Bake for 50–60 minutes or until crust is golden. If crust edges are browning too quickly, cover loosely with aluminum foil. Cool completely on a wire rack.
