Ingredients
3 small bananas
6 wood craft sticks
2 ounces unsweetened baking chocolate, melted
1 teaspoon coconut oil
1 ½ tablespoons Splenda® Stevia Sweetener Jar
Optional toppings:
Crushed peanuts
Unsweetened coconut
Freeze-dried raspberries
Freeze-dried strawberries
Stevia-sweetened white chocolate, melted

Instructions
Cover a small freezer-safe tray or plate with parchment paper. Peel bananas and slice in half horizontally. Place a wood craft stick in the cut side of each banana. Place each banana pop a couple of inches apart on the tray. Put tray in the freezer until bananas are frozen solid, about 3 hours.
In a microwave-safe bowl, melt chocolate and coconut oil. Begin by microwaving it for one minute, then check and stir. Microwave another minute and stir again. Continue until chocolate is fully melted, making sure chocolate doesn’t burn. When chocolate is fully melted, stir in sweetener.
Pour melted chocolate mixture into a tall glass. Dip each frozen banana pop into the melted chocolate, letting the excess drip off. Place back onto tray and sprinkle on toppings immediately if desired.
Serve immediately or wrap each banana pop individually in plastic wrap and store in the freezer. Enjoy within a week!
