Ingredients
For the Angel Bites:
5 egg whites
⅓ cup Splenda® Granulated Sweetener
1 ½ teaspoons vanilla extract
Pinch of salt
For the citrus filling:
½ cup fresh orange juice
¼ cup fresh lemon juice
4 teaspoons cornstarch
3 tablespoons Splenda® Granulated Sweetener
1 egg yolk
Whipped cream, fresh orange zest, and mint leaves, for garnishing

Instructions
To make the Angel Bites:
Preheat oven to 350°F. Lightly grease a baking sheet.
In a mixing bowl using an electric mixer or whisk, whip egg whites on high speed until frothy.
Add Splenda Sweetener, vanilla extract, and salt. Beat on high speed until medium-stiff peaks form.
Spoon rounded tablespoons of mixture onto prepared baking sheet. Bake for 10–15 minutes or until firm and golden brown. Cool slightly, then transfer to a wire rack to cool completely.
To make the filling:
In a saucepan, blend together Splenda Sweetener and egg yolk. Add orange and lemon juice; mix thoroughly. Stir in cornstarch.
Cook over medium heat, stirring frequently, until thickened, about 2 minutes. Chill until ready to use.
To assemble the Angel Bites:
Just before serving, place half of Angel Bites on a platter with the bottoms facing up. Top each with a spoonful of citrus filling. Stack another Angel Bite on top.
Garnish with a dollop of whipped cream, a sprinkle of orange zest, and a mint leaf.
