Double Crust Peach Cobbler

Instructions

  1. Preheat oven to 450°F. Lightly spray an 11” x 7” baking dish with cooking spray.
  2. Unroll one piecrust; roll out and trim to an 11” x 7” rectangle. Place in prepared baking dish. Bake for 10–12 minutes or until lightly browned.
  3. In a large saucepan, combine peaches, Splenda Sweetener, flour, pineapple juice, butter, and almond extract.
  4. Bring mixture to a boil, then reduce heat and simmer for 10 minutes or until peaches are tender. Cool slightly. Spoon mixture over baked crust.
  5. Unroll remaining piecrust; cut into 1” strips (for optional lattice top crust). Arrange in a lattice design over peach filling. Bake 15 minutes or until top crust is lightly browned. Serve warm.

Note

  • To further lower saturated fat, make this Homemade Pie Crust with Splenda Granulated Sweetener instead of using refrigerated pie crusts.
