Ingredients
For the crust:
1 ¼ cups graham cracker crumbs
2 tablespoons Splenda® Granulated Sweetener
⅓ cup light butter, melted
For the filling
12 ounces reduced fat cream cheese, softened
⅓ cup Splenda® Granulated Sweetener
2 large eggs
2 teaspoons vanilla extract
¼ teaspoon mint extract
2 drops green food colouring
12 ounces semisweet chocolate chips, for drizzling

Instructions
To make the crust:
Preheat oven to 350°F. Spray an 8” square pan with cooking spray.
In a bowl, combine crust ingredients; mix until crumbs are evenly moist. Press into bottom of prepared pan.
Bake 8 minutes or until firm.
To make the filling:
In a bowl, combine cream cheese and Splenda Sweetener; mix until smooth. Add eggs, one at a time, mixing well after each addition. Add vanilla and mint extracts and green food colouring; mix until smooth and uniform in colour.
Pour filling over prepared crust.
Bake for 30 minutes, or until set.
Refrigerate for 2 hours or until firm.
In a microwave-safe bowl, heat chocolate chips on high for 30 seconds. Stir until smooth; if needed, heat chocolate for another 30 seconds to fully melt. Drizzle over cheesecake before cutting into bars.
