Preheat oven to 350°F. Spray a 13” x 9” pan with cooking spray.
In a bowl, combine Splenda Sweetener, brown sugar, oil, egg substitute, and pumpkin puree; mix until well blended.
Add remaining ingredients and mix well. Pour cake batter into prepared pan.
Bake for 25–30 minutes or until a wooden pick inserted into the center comes out clean. Cool cake completely before frosting.
To make the frosting:
In a bowl using an electric mixer, combine cream cheese and butter; mix until creamy and smooth. Add Splenda Sweetener, powdered sugar, and vanilla extract. Mix to combine.
Add maple flavouring to taste; mix on medium speed until well blended.
